Punishingly Intricate

I had ah mazing housemade pasta (just that easy thick flat long pasta I can't remember the name of right now) and meatballs at one of our fave neighborhood restaurants last week. Totally toothsome pasta and flavorful, beautifully textured meatballs (also huge!). It's their tuesday night special and is under $20. I was thinking if one of the Primi course guys had made something like that they would have totally pleased the judges.

If the pasta worked out I guess.

It's funny how often the judges have said it, and how hard it is for certain chefs to believe it -- they like simple food that tastes really good.

And even if the judges hadn't made this explicit over several seasons, it *should* be blazingly obvious to anyone with even a passing familiarity with the Craft restaurants.

I wanted to slap Mike I last night when Antonia came into the stew room and said she won, he was such an ass especially since he was on the bottom for service crappy pasta. I had to laugh when Carla said how much she liked cooking with Antonia and Tiffany 'cause they kept their areas clean!
