Mmm. Stuffed squash blossoms are yum. (As is my homemade vegan ricotta -- I kind of halfway followed a recipe and halfway put in stuff that I thought ought to be in it.) Stuffing squash blossoms, though, takes way more concentration and coordination than I have on an empty stomach. Also possibly a few extra pairs of hands. I bought ten blossoms, and filled five of them before deciding that was enough, and just cooked those and put the rest in the fridge for tomorrow.
