anyone have a really good vegan recipe that isn't heavy on veggies but could feed 4 people?

Am too late, but...black beans and quinoa and avocadoes and red and green peppers, with some cilantro (I'm a hater, so I go v. light on it, but oddly, it is needed), dressed with some olive oil and lime juice. Feta for the non-vegans. Plus a salad, and some kind of yummy dessert, and wine? It's a good summery meal, because it's not hot.
