They're kind of like carrots, but they're white instead of orange, and taste kind of sweet.
Maybe you could make cake. Like carrot cake, only with parsnips. Enough cream cheese frosting and any vegetative differences will be irrelevant.

I just found a recipe for parsnip scallion pancakes. I'm pretty sure this wasn't what I was planning to make, but they look pretty good.
