Well, that could bring bad impression up, but I think that this day and age, everyone who thinks that they're colleagues/people who are working under them don't work because they're on the interwebs is just wrong.

Slacking for 45 minutes and working for 6 hours is very good. Most will slack for 3 hours, and work 4, best case.

Well, my mom didn't freak out when I told her that I'm not eating dairy anymore. I really expected a bunch of questions about how I could get all the nutrients I need. Instead, she offered to take me to the fancy grocery store to get food.

Hil, what is/are good egg replacement(s)?

I'm thinking about becoming more vegan (because I can't ever give up real chocolate and possibly honey), but I have a hard time to think about egg substitute - both for eating (taste wise) and baking. I think that as a first stage, once I'll have enough money, I'll move to soy milk. But I'm unsure about the rest. Plus, I always remember Mark Andersen's remark that collecting wheat mechanically murders tons of grass hoppers each year, so why it's OK to kill bugs?

Egg replacements: for baking, there are a few options. You can use soy milk mixed with a little bit of vinegar, which thickens it. That's best for things that are supposed to be light, like cupcakes. You can use soy yogurt for a sort of in-between texture -- still fairly light, but a bit heavier. For things that are supposed to be kind of dense, silken tofu put in a blender is usually best. There are a few commercial egg replacer products, but I have no idea if they're available in Israel. It really depends on the recipe. (I had a vegan matzo ball recipe that I didn't try for about two years, because tofu in matzo balls just sounded weird, but then I finally tried it this past Pesach, and it was incredibly good.) Also, depending on the recipe, sometimes apple sauce or mashed banana make good egg replacers, but if you're using those, that cuts the amount of fat in the recipe way down and if you're not careful, whatever you're cooking will stick to the pan.

For things like scrambled eggs, there's scrambled tofu, which tastes different, but still tastes good. (My mom says she likes scrambled tofu better than scrambled eggs -- she always orders it when we're at a restaurant that serves it.)
