One of Jeff's problems is that he was in the middle ALOT and didn't get that criticism UNTIL he was in the bottom.
I've heard from other former cheftestants that this is a real problem with being in the middle of the pack - you get almost no feedback until you really screw up.
The thing about carryover cooking is it's pretty much limited to big roasts (like a whole tenderloin) and bone-in presentations. A slice of fillet sitting on a plate isn't going to go from rare to medium no matter how much carryover time you give it.
Even if we didn't know that it was bs from general knowledge of cooking - when he was plating it up -- didn't he essentially say that one of his concerns was that he overcooked the meat?

I caught the first ep of this season's Hell's Kitchen, and it looks like this season may be an improvement. Several people got praised during the "signature dish" round (a first I think), so it looks like there's some actual talent there. The first dinner service was a disaster as usual. There are definitely some capital "L" losers this time around, but less than the last couple of years.

I think that a Fabio, Jamie, Stefan finale would be really interesting. And of course, I love Fabio. He'll probably win fan favorite.
I didn't watch all of HK, which I usually enjoy, but did see a few minutes here and there. They usually have some obvious losers who get weeded out in the first few weeks ... I'm not sure if they pick people who don't have a chance, or if they fake it through the selection process.
