She's the only vegan coming so I don't want to go too crazy. I'll get some tofu cream cheese to go on the bagels but I feel like I should have something else she can eat. There's a cookbook called Vegan Brunch, and last time I checked, just about everything except the waffle recipes was on Google Books. (I remember that because I was specifically looking for waffle recipes, because I got a waffle iron for Chanukah, and it annoyed me that they were the only thing not there.) Is this going to be cooked food or just bagels and stuff? Pancakes are easy to make vegan. Oh, and if you do look at the Vegan Brunch cookbook, don't bother with the vegan omelet recipe -- it's really finicky, and it seems like most people have to try it at least five times before they figure out how to get it to work with their pans and stoves, and when it doesn't work, it makes a mess. (I gave up after about three times -- it wasn't worth it.)
A tofu scramble is pretty easy and I'm sure you could get everything you needed at the grocery store, but IME it's not the kind of thing that non-vegans are likely to want, so may be more trouble than it's worth. Hash browns (with or without some kind of vegan sausage stuff) are a good suggestion too.

My mom actually loves scrambled tofu. She doesn't really like scrambled eggs, but she tried some scrambled tofu once and thought it was great. It usually does take some convincing to get non-vegans to try the first bite, though.

I'm perfectly happy to eat vegetarian or vegan food as long as it tastes good. A vegetarian friend told me that isn't the norm for omnivores. weird.

There are some people who freak out at foods labeled "vegetarian," thinking it must all be sprouts and plain tofu. I've seen at least three different letters to advice columns where someone was so offended when he went to a wedding and found out that the food being served there was vegetarian that he left before the dinner was served and then wanted to know if he was still obligated to give a gift, since he hadn't gotten his money's worth at the reception.
