Suggestions for an easy vegan brunch thing I can make with standard supermarket ingredients? Brother's gf is coming to town for Aeryn's birthday party. She's the only vegan coming so I don't want to go too crazy. I'll get some tofu cream cheese to go on the bagels but I feel like I should have something else she can eat. Maybe I'll just do a fruit plate.

There's a cookbook called Vegan Brunch, and last time I checked, just about everything except the waffle recipes was on Google Books. (I remember that because I was specifically looking for waffle recipes, because I got a waffle iron for Chanukah, and it annoyed me that they were the only thing not there.) Is this going to be cooked food or just bagels and stuff? Pancakes are easy to make vegan. Oh, and if you do look at the Vegan Brunch cookbook, don't bother with the vegan omelet recipe -- it's really finicky, and it seems like most people have to try it at least five times before they figure out how to get it to work with their pans and stoves, and when it doesn't work, it makes a mess. (I gave up after about three times -- it wasn't worth it.)
