Every now and then, I think I might actually be a little odd.

Many of my vegetables go to the compost bin without an interim "cooking" stage. I buy vegetables, but then I stare at them and think, "I don't feel like cooking you." Then they become slime and I compost them.

Yep, this is why I quit buying produce. It's better for me to go a mile up the road to a restaurant and get a salad, than to buy produce in anticipation of a day when I might want to make one, which has never happened.

Usually, yes. We don't in my bulding because we're short on "browns" (no lawn = no lawn clippings, so we beg bags of leaves from our neighbors) and they take forever to decompose. And they attract racoons.

But I can't really claim them as mine, per se (so I shouldn't have immediately jumped to defensiveness); I got them from a friend who got them from Vegetarian Times. I'm just a conduit and a consumer (nom nom).

Hil (or anyone), do you have a good recipe for vegan lasagna? Is it easier just to leave the cheese out completely than to try and substitute something?

The way I like it best is to substitute cashew ricotta [link] for the ricotta, and just forget the mozzarella. You can use a packaged vegan cheese for the mozzarella, but it usually gets so absorbed by everything else that you don't really notice it.

edit: I use a bit less lemon juice than the recipe calls for, and usually add a tablespoon or two of nutritional yeast.

It amazes me that eating clean...mostly veggies, some turkey/fish...means I have almost zero trash. Maybe half a bag a week, if I try.
