Oy. I was planning to get an early start with driving home today. Instead, I woke up, ate a bagel, and then fell asleep again until almost 1 PM. I guess my new plan is eat lunch with my family, then drive home.

In today's exercise in leftover management I just had eggs scrambled with turkey, gruyere and fresh herbs. Yum! Fortunately my turkey was really juicy and I sauteed the meat in the butter first to keep it moist and warm it before adding the eggs.
I like having the fresh herbs around. I need to chop up the rest of them to have a stash for a while.
Later, I will be taking the tips from the Chron on how to turn leftover stuffing into a savory bread pudding. That way I can add some eggs and cheese to the stuffing and make little savory muffins I can send to work with JZ so she has some leftovers that taste like Thanksgiving but also give her the protein she needs.
I just got back from TJ's, where I noticed that they have something new called Mac and Cheese Bites in the frozen food section. I could be wrong, but from the package, it looks like deep fried mac and cheese.
D just whipped up leftover ham and some leftover queso sauce in some boxed mac and cheese for lunch, and it was easy and tasty.
I think make open-faced turkey sandwiches for dinner this week, and I have some beans in the pantry; I'll crock-pot some ham and beans one day. 2 menu thoughts for the week: score! Thanks for the foodspiration, Hec.
I have a windowsill that's perfect for a little herb planter (I have SO many things I have been wanting for the house, and now I can start to slowly add them.) I've been lusting after these little herb pots in particular: [link]
I think basil, chives and dill would fit on the sill nicely. Then in the summer, I can grown a shitton of basil outside; maybe some rosemary in a bigger pot in the dining room. Hmm.
