I am just now eating dinner and would like to lounge on the couch, but I have a post to strip. Ahrg. Did not plan this evening very well last night.

Hey, everybody! What are your favorite squash recipes? Thanks to my CSA, I now have six acorn squash and two red kuri squash, and I'm going to run out of ideas before I run out of squash.

I need to go to the doctor tomorrow. And start working on my annual review. And prepare for a presentation on Monday. Bah.

You can make butternut squash enchiladas with other squashes -- acorn squashes work well.

Squash is great in a fritatta, especially if you have other vegetables to use up.

Any way I spell fritatta looks wrong. I'm too tired to really care, though.

I have a recipe where you basically peel and cube squash, add some diced onion, toss with olive oil and lemon juice and salt and pepper, and roast in the oven. Then eat over chunky pasta with parmesan cheese. It calls for acorn squash.

I like winter squash in a curry - most recipes call for pumpkin but you can use just about any winter squash except spaghetti.

I love winter type squash so much, I just bake and eat It is especially good on top of greens
