Squash is great in a fritatta, especially if you have other vegetables to use up.

Any way I spell fritatta looks wrong. I'm too tired to really care, though.

I have a recipe where you basically peel and cube squash, add some diced onion, toss with olive oil and lemon juice and salt and pepper, and roast in the oven. Then eat over chunky pasta with parmesan cheese. It calls for acorn squash.

I like winter squash in a curry - most recipes call for pumpkin but you can use just about any winter squash except spaghetti.

cut open the squash and seed. Steam in the microwave, Stuff the squash with a mixture of ricotta cheese, egg, sautéed onions , spinach and mushrooms. Bake it in the oven 'till hot

I just made dinner for Noah, 3 batches of food for Grace, washed the dishes, dressed Noah in jammies and boiled eggs in the hour I've been home.

Also, I think my limeades for learning isn't going to fly. I'm never going to get the books I need and I'm feeling pretty disheartened and blue about it.

Which sort of sucks. I have 2 classes of 50 each (no. Really. I was told they would only be out of compliance at 56 to 1). and I was hoping to get the book I need but at this rate No Way. I need some of the social networking fundraising mojo msbelle wrote about.
