What do you make with fennel?
Anything! Seriously, fennel is one of my favorite things in the world. You can eat it raw anywhere you'd normally use celery. You can roast it (by itself or underneath a chicken) and it will caramelize into a delicious spreadable jamlike thing. You can grill it with some tomatoes and onion and turn it into an awesome salsa for fish.

I like to take thinly sliced fennel, tomatoes, capers, and onions (and a splash of white wine) and roast them in the oven at 400 for 20-30 minutes with a nice piece of firm white fish, like cod or swordfish. Very tasty and very healthy.
