Luckily, the French are all about one ingredient salads (lettuce, carrots, cucumbers, or tomatoes), so there's a rationalization for my laziness.

Oh, intriguing! I just had a nice bowl of lettuce slathered in bleu cheese vinaigrette. Nom. I can call that a salad?

I eat salad pretty much every day, partly because I AM lazy, and partly because I really like it. Peppery fresh baby spinach! All sorts of varieties of teeny tomatoes!

That said, I am also eating an empanada tonight too. Spinach.

I probably have Popeye beat for the amount of spinach I consume.

Punishingly Intricate

Love salad! Sometimes I am lazy and don't want to wash greens though. That's always the "hardest" part for me. Tonight , though, I washed all the arugula and spun it and made up some vinaigrette and we will be having it with omg delicious grilled bison steak left over from last night. And succatash and, for me because Bob is a raw tomato hating freak, sliced heirloom tomatoes for me!

I get big salads for lunch all the time because all the prep work is done for me. I almost never eat salads at home though, aside from just a big pile of lettuce or something.

I wash (and spin the spinach) from the market all at once over the weekend, so I don't have to do it during the week.

To whom can I email some cucumbers? We have so many! And since the squirrel that is the source of all evil has eaten all of my tomatoes, lo, we are stuck with heaps of one ingredient salad (and soups and dips and...)
