Well, sweet potatoes and regular potatoes have different textures. Also, the inherent sweetness of the sweet potato does lend itself to playing with sweetness, like squash. Sweet potato pie, always excellent- I like it better than pumpkin. I don't like the marshmallow action, but maple and molasses plays well with sweet potato.
I guess I just consider sweet potato more of a peer of squash, despite the name.

I have issues.
It was delicious! Used three different squashes.
The sweet potato puddings I've had I don't think as having had Irish potato textures.
I don't think I've ever had squash.
I make a butternut squash souffle thingy that i love, squash whipped up with evaporated milk, egg, vanilla, and some sugar. good times.
Then I also make a soup with just squash, cream and nutmeg.
I'll eat all of sarameg's share -- except for the icky stuff with marshmallows.
I made a sweet potato soup with apples and onions -- that convinced a sweet potato hater that they can be saved.
Now I wish I had something sweet. Pie is gone and I didn't get any sweet potato leftovers, alas.
