I've heard the same thing. I made sure to sprinkle some shredded cheese on the florettes during the last minute in the microwave.
You know those frozen boxes of broccoli with the longer stems? I like the stems in those. But these fresh ones were too tough. Maybe next time I'll peel them as Vortex does.
Searching for the truth about broccoli I found this. I know it's a publicity stunt but wow did it make my allergies act up.

That is on fact true. Carotinoids (the good stuff in broccoli and carrots and tomatoes etc) are fat-soluble, not water-soluble. So if you don't eat them with a bit of fat (olive oil is best) you don't get the good stuff.

One of the NC grocery chains makes a yummy sort of slaw out of broccoli stems. I ate it without knowing what it was and thought it was just really green cole slaw. I guess they're related veggies.
Yeah, you can get brocco-slaw or whatever they call it in the produce aisle in most grocery stores. (Not mixed with the goop, just the sliced up stems and cabbage and stuff.)
I think it makes way better cole slaw.
