You guys should get the Edison.

I've also discovered that my complete inability to make omelets also extends to vegan omelets -- I can never get them to fold without tearing.

I only really mastered them last year. The key was using a small omelet pan. Eight inches pan for a two egg omelet. And you have to swirl the egg around the pan until it gets thin at the edges. Just like you swirl crepe batter. Then I turn the spatula over and I can usually get the edge of the spatula under the crisp edge of the omelet and then you can fold it over neatly.

Honestly the main thing holding us back on the Edison is cost. We love it, but one of their limitations on a buyout is that they will only do an open bar, which is a huge piece of what drives our cost up. We were planning to do a cash bar.

And the fact that we really can't exclude the slightly-too-young niece. That's a big one. I don't think most of our friends would have any issue with leaving their kids at home, but that would suck for her since she's really not a kid anymore.

And yeah, the four-hour open bar is crazy expensive. Though still way less than a "typical" American wedding.

Best wedding gift we got was from DH's grandparents--they paid for the open bar at our reception.

eta: slightly less illegal approach: many places don't card anyone working on an event, so if she helps set up....ok, yeah, that would still suck for her having to show up early....it's how my underage friend and i got into the first convergence after we were sold tickets with no warning that the venue was not all ages.

Yikes. I'm looking at the place in SF where the math conference will be in January. The cheaper hotels in the area are around $220 a night. I think that the conference usually gets a special rate somewhere. I hope it's a really good rate.
