All about the dough, bro.
Pumpkin Bread
1 1/2 c. flour
1 c. pumpkin (if you use fresh pumpkin, omit the 1/4 cup of water listed below, because fresh has a higher water content)
1 c. sugar
2 eggs
1/4 c. vegetable oil
1/4 c. water
1/2 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon ground cloves
1/8 teaspoon ground ginger
(for the last 4 ingredients, you could just swap in 1 teaspoon of pumpkin pie spice mix if you have it)
Preheat oven to 350. Mix the ingredients together. Grease a loaf pan, pour batter in. Sprinkle with cinnamon on top.
Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
You can add in chopped nuts, dried cranberries, or chocolate chips as your heart desires.

I'm so excited! Not only do I get to spend this weekend with my BFF (who still lives in DC) but I just found out via fb that one of my oldest friends (our mothers were high school besties) is in town with her husband, and I don't think I've seen her since her wedding a year and a half ago. Yay!

I'm about to go make some cornbread (or muffins). Not for Thanksgiving; just to go with dinner. I don't know what *dinner* is going to be (leftover chili seems the winner, because chili + cornbread is an excellent combo), but I know that I by god want corn muffins.

We are about to have leftover chili for dinner! I have no will or ingredients to make cornbread though. I just made about 6 dozen gougeres, little cheesy buns. Man, it smells good in here though!
Gougeres are not easy to make either! But they are so delicious. SO SO SO delicious.
