I never fail to be surprised how much spinach wilts when you cook it. I mean, I buy enough but it's still all surprising when I put in an entire bag and it gets all small-ish.

I am so happy to have spinach from my vendor at the market again. I was squeaking by with grocery store spinach, and it just had no flavor. Now I've got the velvety pepper baby spinach again.
