This is the kind I like, but seems impossible to find outside of the state. My favorite filling is Amaretto.
I don't really approve of filled king cakes. I mean, they're okay, but they don't seem like king cakes to me.
I'm sort of glad they are not like the king cakes I know because eating them on Mardi Gras never made sense to me. Now I can just compartmentalize them in my brain as two entirely different beasts.
How come?
Because the cakes were traditionally made for Epiphany (hence the king), which is when I've always had them.
ETA: Galettes are generally only sold in early January, although sometimes this is extended through Chandeleur (Candlemas), which some consider the close of the Christmas season. Galettes are puff pastry filled with frangipane (which I love).
